CTE 2206 - Intro to Culinary Arts
9, 10, 11, 12
A laboratory class introducing the basics of food preparation and nutrition. Student will learn the scientific principles of cooking quick breads, yeast breads, meats, fruit vegetables, eggs, milk dishes, soups, cakes, desserts, salads and pastries. Holiday and special occasion cooking will be presented. Fee required.
CTE 2207 - Intro to Baking
10, 11, 12
(Prerequisites: Intro to Culinary Arts, Grade of B or better) The course is designed for the student interested in exploring a career in Professional Baking. All types of breads, pastry and desserts will be taught, produced and sold within the Coconino High School community. Fee required.
CTE 2208- Culinary Arts I
10, 11, 12
(Prerequisites: Intro to Culinary Arts, Grade of B or better).
A course designed to build on the principles and skills acquired in the Introduction to Culinary Arts course. Students will participate in large scale production of breads, desserts, hot and cold foods and catering. Students may earn Food Handler Certificate issued by the Coconino County Health Department. They may assist in PANTHER CAFE, our new campus restaurant and bakery. Fee required.
CTE 2209 - Culinary Arts II
11, 12
(Prerequisites: Culinary Arts I, Grade of B or better.) A course designed to enhance the skills and knowledge developed in Culinary Arts I Student may work as kitchen manager, planning and executing the dining experience at PANTHER CAFE. Student may choose to advance acquired skills by participating in Regional, State and National Competitions. Skills/USA, C-Cap, FCCLA and ProStart are competitions that provide students opportunities for recognition and/or scholarships. Fee required.
