GOVERNING BOARD REPORT
May 2004
May 24, 2004
Dear Board Members and Administration,
The purpose of this report is to give you a financial update of the Food Service Department thru April of this year.
We have also included some of the other things we have worked on since our last Board Report in January. I have broken down this report into 4 categories:
1) Financials
2)
Be a Star Initiatives, Awards
3) Food Safety Training and CHAT Program
4) Coming Soon! New FUSD Wellness Program for next year
Financials
We have had fantastic financial results for the District this year. As you look at these results, please keep in mind that we started the year with three kitchens being remodeled, therefore we lost approximately $90,400 in revenue as we had to provide sack lunches at two of these locations thru most of January which hindered student participation. Of the $90,400 in revenue that was lost, after taking into consideration the food cost, labor and paper costs, approximately $35,412 would have dropped to the bottom line for the District. Enrollment has dropped by approximately 200 students as well.
As my responsibilities have grown, I am now helping oversee 5 other Districts in Northern Arizona. This has caused my travel to increase to about one day a week out of Flagstaff. Therefore, I was able to transfer $14,000 of my salary out of Flagstaff to be paid by Chartwells.
Thru April the District is at a $32,853 excess!
The goal for year end originally was $74,000 that was estimated before we knew Mt. Elden Middle School and South Beaver Elementary School would not be ready for (kitchen) opening.
Last year thru April we were at a $65,583 deficit and ended the year with a $69,000 deficit. Next year we expect to have continued improvement to the bottom line. The following illustrates the fantastic results we have achieved the last two years:
Total Revenue to the District
* This year thru April $1,928,700
* Last year thru April $1,886,340
* We are up $42,360
Meal Counts Breakfast Participation:
* This year thru April 150,374
* Last year thru April 142,976 Lunch Participation:
* This year thru April 610,293
* This year thru April 613,584 Adult Meal Participation:
* This year thru April 12,686
* This year thru April 9,693
Be A Star Initiatives
1) We named Vicki Dolan our Be A Star Associate of the year! Vicki is our Cafeteria Manager at Cromer Elementary School. The following is a brief summary of her accomplishments this year:
- Participated and helped organize a Root Beer Float Social and Sock Hop event. Vicki helped raise about $750 for Cromer Elementary.
- Organized coloring contests for the students for Thanksgiving, Christmas and Valentines Day. Vicki made special prizes for each event, like giant cookies in the shape of a pumpkin, Christmas tree and a giant heart.
- In February she helped make 900 muffins for Muffins With Mom day!
- Since Muffins With Mom was such a big success, they decided to have Donuts for Dads in March.
- Vicki organized a fundraiser for the Flagstaff Stingrays, accumulated over 40 donations from the community, her staff with the help of volunteers prepared Navajo tacos, hot dogs, baked goods, popcorn, etc. They raised over $1100 for the Stingrays swim team.
2) We named Killip our Be A Star school of the year!
Killip made special gifts for their children throughout the year for special events and holidays. They showed a very positive and exemplary attitude toward the students all year. The associates received gift cards at Target for their efforts.
3) We provided lunch for the athletes at the Special Olympics out of Flag Middle School.
4) We had a Cultural Diversity Week, where we provided food on the lunch menu based on different cultures each day.
5) A contest was held at Mt. Elden Middle School for students to name the new kitchen. The winning name is The T-Bird Roost. Winners of the contest were given movie tickets.
6) We conducted a Bring Your Parents to Work Week, where parents could come and check out what the students are being served.

FUSD Wellness Program
At one of Mr. Ritchie's staff meetings, he challenged all of his department heads to come up with a special "Signature Service Initiative", something above and beyond our normal job duties that could benefit either the students, the District or the community in general.
The purpose of the initiative that the Food Service Department came up with is to combat the growing epidemic of obesity in our children, as well as adults, and to promote a healthier lifestyle for our community.
Although we have not yet come up with a "flashy" name, we have put together a committee to work on this program. The list of members for this committee is still growing, but to date we have the following members:
Denise Burley, Nutrition Network, County Health Dept.
Karen Anderson, Nutrition Network, County Health Dept.
Paul Kulpinski, Governing Board Member
Debbie Sliver, Associate Director, FUSD
Nancy Maestas, Quality Assurance Manager, FUSD
Don Gala, Resident District Manager, FUSD
We are still working on the details, but here is what we have decided on to date:
For the students:
* We will feature a healthy menu item each day on our menus
* We will establish a point system to reward the students that choose the most healthy option, as well as assign points to the amount of exercise a student partakes in, for example, 1 point for every 15 minutes of exercise and 4 points for choosing the featured menu item
* The Cafeteria Manager will assign a card to every student that wishes to participate for tracking purposes
* We will make it competitive by challenging elementary schools against each other and secondary schools against each other; we will have prizes for the winning team as well as individuals
For the Adults:
* A weight loss/BMI (Body Mass Index) contest for whomever would like to participate
* We would break up the adults into 4 teams for example: - District Office staff, including Board Members
- Maintenance, Custodial and Transportation staff
- Principals, teachers, office staff, cafeteria staff
- Parent/Teacher Organizations
* All these teams would meet at Little America and get on a truck scale, (perhaps we invite the media) then at the end of the semester we would do it again, and pick the winning team
* We would provide weight tracking sheets, exercise sheets and even food journals; we will organize a special walk/run monthly for students and adults to attend!
