Culinary Arts I CT06A/B

Culinary Arts I is the introductory course for the 2-year Culinary Arts coherent sequence. This is an entry-level class providing basic principles in food science, food safety, and food preparation. Students will learn basic baking and cooking techniques. It is designed to introduce students to fundamental food preparation terms, concepts, and methods in Culinary Arts; laboratory practice will support classroom instruction/learning. Essential terminology, knowledge and skills/techniques are covered with an emphasis on basic kitchen safety, sanitation, equipment maintenance, and operation procedures.
Culinary Arts II CT07A/B

Culinary Arts II is a continuation of skills learned in Culinary Arts I. This course provides “hands-on” training for students interested in a job in the food industry. Students obtain a Food Handler’s card, a nationally recognized industry certification from Always Food Safe. Students assume the responsibility for running The Panther Café, a licensed restaurant and bakery. Students learn advanced skills in a state-of-the art professional kitchen. Students have the opportunity to compete in CCAP, FCCLA and various other culinary competitions to earn college scholarships.
Culinary Arts III CT 92A/B

Prerequisites: Culinary Arts I & II, with a C or higher
Culinary Arts III is a continuation of skills learned in Culinary Arts II. Third-year students work in this advanced “hands-on class,” as kitchen managers in planning, preparing and continuing the responsibility for running The Panther Café, a licensed restaurant and bakery. Students receive their Food Manager’s license, which is a nationally recognized industry certification from Always Food Safe. Students learn advanced skills in a state-of-the art professional kitchen. Professional skills are developed in planning, preparing, marketing and serving meals to teachers, staff, student clubs and various sports clubs. Students have the opportunity to compete in CCAP, FCCLA and various other culinary competitions to earn college scholarships.
Baking and Pastry CT20A/B
Grades: 11 - 12 College Prep: Yes Credit: 1.0 Duration: Full-Year Fee: $60.00
Prerequisites: Culinary Arts I & II, with a C or higher
This course is an advanced baking course for students who are interested in a possible career in the baking and pastry industry or as a great foundation in baking as a life skill. Students will work in a state-of the art professional kitchen learning a variety of advanced baking and pastry concepts and creating finished products. Students receive their Food Manager’s license, which is a nationally recognized industry certification from Always Food Safe. Products made will be offered in The Panther Café or for special catering events for our school and community. Students have the opportunity to compete in CCAP, FCCLA and various other culinary competitions to earn college scholarships.
